Over the winter, we use more onions, and as spring comes and the veg boxes are filled with onions, it’s easy to build up an onion pile.

This recipe from Riverford is extremely simple and a great way of using up onions. Can be used as a standalone veg, or a tray of them could go in the oven with the roast for the appropriate time.

Roasting the onions. then peeling the skins and chopping them, will eliminate sore eyes, if you want to make French onion soup. Peel and chop while still warm, heat up in a pan with a little oil and butter, add the garlic if called for in your recipe and proceed from there. If you have a garlic roaster. you could pop the cloves out of the bulb and mince or squish, in with the onions and just make sure everything has the golden colour, before moving to next stage.
