Nina Teicholz started her career as a reporter for National Public Radio in the USA. Later, she became a freelancer, writing mostly about food, for The New York Times, Men’s Health, The Atlantic, Salon, The Washington Post, Gourmet, The New Yorker, The Economist and The Wall Street Journal.

Her piece Heart Breaker for Gourmet, in 2004, got Teicholz interested in fat. In 2014, her book The Big Fat Surprise: Why Butter, Meat and Cheese Belong in a Healthy Diet ISBN 9781451624427 was published and made The New York Times Best Seller List. It was named as one of the top non-fiction books of 2014 by The Wall Street Journal and one of the best science books of 2014, by The Economist.

Nina Teicholz wrote an op-ed piece for The Wall Street Journal, entitled ‘ The Last Anti-Fat Crusaders Nina Teicholz: The Last Anti-Fat Crusaders – WSJ which was seen by hedge fund founder John Arnold, of the John and Laura Arnold Foundation (now Arnold Ventures). .He asked her to get involved in their efforts to fight obesity.

The Arnolds funded the Nutrition Science Initiative (NuSI) (founded by Gary Taubes and Peter Attia), Action Now Initiative, (a lobbying group) and Nutrition Coalition. which focuses on improving nutrition guidelines.

In February 2015, the US Dietary Guidelines Advisory (DGAC) produced a report, which was supposed to be the foundation for the 2015 Dietary Guidelines for Americans. This created a furore, with the anti-fat mainstream nutrition DGAC, and US Department of Health protesting vehemently, especially after a piece by Teicholz in the British Medical Journal. The BMJ issued a correction in October 2015. In December 2016, the BMJ issued another correction, saying that after independent review, they had decided NOT to retract it.
