Paul Brooke-Taylor, Head Chef at Highclere Castle, makes Lady Carnarvon’s favourite soup, White onion soup with truffle oil. Highclere Castle, is of course Downton Abbey. Simple but sumptuous, made with vegetable stock, onions, garlic, leeks (whites) and celery plus butter, cream, salt and pepper and with a drizzle of truffle oil at the end.
