O IS FOR OMELETTES

Omelettes look easy, when cooked by chefs. To get to that stage, two things are needed in addition to the ingredients. Firstly, practice and secondly, confidence.

Omelettes make a great breakfast or lunch for anyone on a low carb or keto diet. They are a great ‘vehicle’ for experimentation. Common variations are cheese or mushrooms but others could be fried onions, smoked salmon, foraged wild sorrel or sautéed vegetables. They can also incorporate chopped leftovers.

Here, Gary Rhodes reminds us not to add salt to the omelette mixture, because it breaks down the eggs. Most people will be happy to use black pepper, but you could use white pepper to avoid black speckles, if you wish.
