Omelettes look easy, when cooked by chefs. To get to that stage, two things are needed in addition to the ingredients. Firstly, practice and secondly, confidence.
Omelettes make a great breakfast or lunch for anyone on a low carb or keto diet. They are a great ‘vehicle’ for experimentation. Common variations are cheese or mushrooms but others could be fried onions, smoked salmon, foraged wild sorrel or sautéed vegetables. They can also incorporate chopped leftovers.
