With the British summer drawing to a close, we made our first soup of autumn already. Back in 2015, Rich Harris made Celeriac and Walnut soup for a Waitrose video.
The recipe states that the soup has 16.1g carbs per serving, but doesn’t show how many servings the recipe makes. It uses Cooks’ ingredients vegetable stock | Waitrose & Partners which has 10g carbs per 100g serving and the recipe uses 1.5 bags of the vegetable stock.
Using a home-made vegetable stock with lower carb vegetables or a lower carb vegetable or chicken stock should reduce the carbage. swap out whole milk for the semi-skimmed or you could experiment with half whole milk, half crème fraîche or cream.
Celeriac itself, has only 2.3g carbs per 100g !
