Back in June 2020, food writer Tom Parker Bowles, now stepson of King Charles III, shared his mother’s recipe for Baked Eggs, in his cookbook Let’s Eat published by Pavilion Books.
BAKED EGGS serves 2
A little chopped ham or asparagus (optional)
4 eggs
2 – 3 TBSP double cream
4 TSP butter
freshly ground sea salt and black pepper
hot toast to serve (not for low carbers)
Preheat oven to Gas 4 180C 350F.
If using ham or asparagus, divide between two ramekins. Break two eggs into each ramekin. Add cream, butter, salt, pepper.
Boil some water, put into a roasting tin. Carefully add ramekins to get a bain-marie effect, making sure that the water comes halfway up the sides of the ramekins and no more.
Bake for 7-10 mins, until the yolk is wobbling and the white just set.
